2Instructions
- 1
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the spicy Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 7-8 minutes. Drain off excess fat, leaving about 1 tablespoon in the pot.
⏱ 10 min - 2
Add the chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes, until the vegetables begin to soften. Stir in the minced garlic and cook for another 1 minute until fragrant.
⏱ 8 min - 3
Pour in the crushed tomatoes and broth. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and let it gently bubble for 10-15 minutes to allow the flavors to meld.
⏱ 15 min - 4
Stir in the rinsed cannellini beans and small pasta. Increase heat to medium and cook, stirring occasionally, until the pasta is al dente, about 8-10 minutes, or according to package directions.
⏱ 10 min - 5
Add the chopped kale to the soup. Stir until the kale wilts, which should take 2-3 minutes.
⏱ 3 min - 6
Taste the soup and season with salt and freshly ground black pepper as needed. Ladle hot soup into bowls and serve immediately, topped with freshly grated Parmesan cheese if desired.
