    Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned pork chops to the skillet. If your skillet is not large enough, sear in two batches.

    Sear the pork chops for 3-4 minutes per side, or until golden brown and cooked through (internal temperature reaches 145°F / 63°C). Remove the pork chops from the skillet and set aside on a plate, tented with foil to keep warm.

    Reduce heat to medium. Add the minced garlic to the skillet and sauté for 30 seconds until fragrant, scraping up any browned bits from the bottom of the pan.

    Pour in the chicken broth and bring to a simmer. Stir in the Dijon mustard until well combined. Continue to simmer for 2-3 minutes, allowing the sauce to reduce slightly.

    Stir in the heavy cream and return the sauce to a gentle simmer. Cook for another 2-3 minutes, or until the sauce has thickened to your desired consistency.
