  • 1 teaspoonDashi powder or granules
  • 4 tablespoonsWhite or Awase Miso paste
  • 400 gramsFirm or silken tofu
  • 2 stalksGreen onions

    In a medium saucepan, bring the water to a gentle simmer over medium heat. Stir in the dashi powder until fully dissolved.

    While the dashi is heating, drain the tofu and cut it into small 1/2-inch (1.25 cm) cubes.

    Remove the dashi broth from the heat. In a small bowl, scoop a ladleful of the hot dashi broth and whisk in the miso paste until smooth. This prevents the miso from clumping.

    Pour the dissolved miso paste back into the saucepan with the dashi broth. Add the cubed tofu. Gently stir and return the pot to very low heat for 1-2 minutes, just to warm through. Do not boil the soup once miso is added, as this can diminish its flavor and beneficial properties.
