  • 12 ouncessmoked sausage (e.g., Andouille or Kielbasa), sliced into 1-inch pieces
  • 1.5 poundssmall red potatoes, halved
  • 4 countears of corn, shucked and halved
  • 0.5 cupseafood boil seasoning (e.g., Old Bay)
  • 2 countlemons, halved
  • 4 countgarlic cloves, smashed
  • 2 teaspoonskosher salt
  • 8 cupswater
  • 0.5 cupmelted butter, for serving (optional)

    Fill a large stockpot with 8 cups of water. Add the seafood boil seasoning, kosher salt, halved lemons, and smashed garlic. Bring the mixture to a rolling boil over high heat.

    Add the halved small red potatoes to the boiling water. Cook for 10-12 minutes, or until the potatoes are just tender when pierced with a fork.

    Add the sliced smoked sausage and corn on the cob halves to the pot. Continue to boil for another 5-7 minutes, until the corn is bright yellow and the sausage is heated through.
